Christmas Chocolate Cookie Recipe

 Mmmmm, Christmas Cookies!!
 
 
 
 
 Butterfly and I are having a snow day, as some of you may know from the photos on our Facebook page and Instagram,
so we decided it's the perfect day to make a batch of Christmas cookies today!
We are calling them "Christmas Chocolate Sparklers"
Also known as Mayan Chocolate Sparklers!

What Santa wouldn't want these laid out for him on Christmas Eve?

 
 We are sharing the recipe with you all today!  Here it is:


 Topping:
1/2 cup sugar
1 tsp cinnamon

Cookies:
1 1/4 cups butter, softened
3/4 cups sugar
3/4 cup brown sugar, packed
2 eggs
1 3/4 cups all purpose flour
1 1/4 cups cocoa powder
1 tbsp cinnamon
2 tsp baking soda
1/4 tsp pepper
Pinch of cayenne pepper


Preheat oven to 350.
Line cookie sheets with parchment paper.

Combine sugar and cinnamon.  Set aside.
Beat butter and sugars until creamy.  Beat in eggs one at a time.
Add next six ingredients, mixing well until incorporated.  Stir in some chocolate chips!

Roll into 1-inch balls.
Roll into cinnamon and sugar mixture and place on prepared cookie sheets, about 2-inches apart.

Bake 8-10 minutes. Cookies should still be soft in the centre.
Let cool on baking sheet for 3-5 minutes.

Note:  Cookies can be frozen raw and stored in an airtight bag or container.
If baking from frozen, add 5 minutes to baking time.


Kids' Participation:
Butterfly loves adding the ingredients into the mixer, and she did a great job rolling the dough in balls and dipping it into the sugar mixture.  Our hands got messy, but she helped me out a lot and felt so important baking alongside her Mommy!  ;)
