Zucchini Brushetta

It's been awhile since I posted a recipe idea.
This past weekend we tried a yummy new quick healthy recipe.
Zucchini Brushetta!

One of my closest friends posted this on Facebook and I had to give it try!
It's a low carb simple easy side dish.

Slice the zucchini in half.
Slice off the bottom to keep it stable.
Brush with olive oil and top with garlic or garlic powder.
Top with sliced tomatoes, salt and pepper to taste. 
Use mozzarella cheese, Parmesan cheese or mixed blend.
I also added chopped green onions.
Bake 375 for 20 to 30 minutes until soft.

A very yummy healthy idea to go with dinner.
Butterfly ate hers all up, probably because she said it almost tastes like pizza! :)
